Cinnamon Raisin Rice Pudding
There is nothing like yummy Rice Pudding. Rice puddings are found in different versions throughout the world either boiled or baked and they typically have rice (typically white), spices (I’m using cinnamon here but people use nutmeg, ginger, etc.), milk (people use whole milk, coconut milk, cream or evaporated), eggs, and some type of sweetener (sugar, honey, fruit, syrups). We will be using vanilla extract, sugar, and raisins to make it sweeter.
Ingredients
1 cup of cooked rice.
3 eggs
1 ½ cups milk
1 ½ tsp vanilla extract
⅓ cup sugar
⅓ cup raisins
1 tsp cinnamon
Directions
Beat the eggs.
Then add the milk, sugar, and vanilla extract to the eggs and mix it all together.
Add the 1 cup of COOKED rice and ⅓ cup of raisins
Pour into baking dish
Sprinkle the concoction with 1 teaspon of cinnamon
Set the baking disk into a slightly larger pan
Pour water into larger pan to 1 inch depth
Bake in 325 degrees F oven for 50 minutes or until set.
