Make the fruit into a puree (you can leave it a little lumpy, if you wish) and mix in some sugar syrup. Make a sugar syrup by putting 200 g granulated sugar and 220 ml water in a small saucepan over low heat. Stir until the sugar dissolves then turn up the heat and boil for 2 minutes. Let cool. Use a little sugar syrup mixed in with the crushed fruit. Experiment by freezing different mixtures in small cups till you get what you need. If you think it is too sweet add some lemon juice. Other things that would work are putting in alcohol or whisked egg white, but that probably is not what you want for a GCSE project. Best wishes.
