How Do You Make Cheesy Chicken Enchiladas?
Who doesn’t love a good enchilada? I probably make these once a month and they fly out of the pan. Just serve with rice and beans and you will have a great meal. Place the chicken in a pot of cold water. Add three cloves of crushed garlic, salt, and pepper. Simmer for 1 – 2 hours until done. Remove the chicken from the water and shred using two forks. Chop the onion and cilantro and mix together in a bowl. Now fry the tortillas in oil for a few seconds just until soft. Either using the red or green sauce depending on your favorite, pour enough to coat the bottom of your pan. Lay one tortilla down and fill with the chicken, cheese, onions, and cilantro. Place the filling on one side of the tortilla and roll it up and place in the pan. Repeat this until your pan is full. Now pour enough sauce to cover the tortillas. Sprinkle the enchiladas with cheese, onions, and cilantro. Place in a pre heated 350F oven for 30 minutes or until the cheese is melted. Serve with sour cream, rice, and bean
