How Do You Make Chicken Enchiladas With A Green Enchilada Sauce?
One of my favorite dishes is chicken enchiladas made with a green enchilada sauce. One of the major mistakes that many cooks make is to not bother seasoning the chicken and simply having chicken and cheese in the enchiladas. I prefer to season mine with sautéed onion and garlic and also with Ortega chilies, salsa and seasonings. This way they come out very flavorful. Ingredients for Chicken Enchiladas: 4 boneless and skinless chicken breasts 2 boneless and skinless chicken thighs 1/4 of an onion sliced 1/4 teaspoon of salt 1/2 teaspoon of garlic 1 teaspoon of thyme 2 tablespoons of vegetable oil 1 onion, diced 2 garlic cloves, minced One 4 ounce cans of Ortega chilies 1 1/2 cups of a chunky salsa 1/2 teaspoon of oregano 1/4 teaspoon of salt 1/4 teaspoon of ground cumin 1 teaspoon of chili powder 2 large cans of green enchilada sauce 1 dozen corn tortillas 1 pounds of sharp cheddar cheese 1 pounds of Monterey Jack cheese I have found that the best way to cook the chicken for enchiladas
