How Do You Make Easy Cheese Enchiladas?
Tex-mex enchiladas that are easy to make and your family will love!!! These cheese enchiladas are topped with a chili sauce and baked in a 9×13 casserole dish. This recipe will make two 9×13 pans. Brown meat (turkey, beef or chicken). You can omit this step if you want to make a vegetarian enchilada dish. Mix in a large pot: green chiles, chili seasoning, pinto beans, chili beans, tomato juice and meat. Stir well and let cook for 20-25 minutes, stirring occasionally. While that is cooking, heat your oil. You will need just enough oil to coat bottom of pan. LIGHTLY fry your tortillas until they are golden brown. Put on a plate lined with paper towel to absorb the excess oil. Let cool. Put cheese down center of tortilla and roll up. Place the rolled up tortillas into your 9×13 pan in a single layer. Pour chili mixture on top of cheese filled tortillas and top with remaining cheese. Cover Enchiladas with foil and bake at 325 until sauce is bubbling and cheese is melted. About 20-25 minute
