If you want TexMex, then these enchiladas are great and easy to make. They are guaranteed to be delicious for your family. A great main course. Serve with refried beans and mexican rice. Top with Pace Pacante sauce. Heat 2 can of chili (Wolf brand chili is the best). Heat oven to about 32 degrees. Grate cheese and set aside. Heat about 1 cup of cooking oil in small frying pan. Dip tortilla in heated oil until it become soft, and place in baking dish. After all tortillas has been placed in baking dish, put a generous amount of cheese in each one. Roll up and place at one end of the baking dish Place rolled tortillas next to each other. Continue this until all tortillas have been filled and rolled. Once enchiladas have been filled and rolled up pour heated chili on top. Bake in oven until all cheese has been melted.
