Preheat oven to 350* Spray an 8×8 inch baking pan with cooking spray, set aside. In a medium bowl, combine flour, cocoa powder, salt and coffee crystals. Mix well with large spoon. In a large bowl, whisk together egg white, eggs, sugar, applesauce, oil and kahlua liquor and vanilla extract. Stir in flour mixture until just blended, do not overmix. Pour batter into prepared pan. Add chopped nuts and chocolate chips to top of batter. Bake until set and toothpick comes out clean, about 25 minutes. Test brownies at 20 minutes, oven temperatures may vary. Place pan on wire rack and cool for at least 30 minutes. Cut brownies into squares and place on serving plate. Variations: Add some coconut to the nut/chocolate chip mixture for the topping.
