For commercial breweries then it takes about 2 weeks for an ale and 3 or more weeks for a lager. Quantity has very little effect on overall length of time besides the initial brewing process… it takes longer to mash and lauder more liquid… but not that much longer. As for what Sylvia said. More sugar can lead to more booze. It also leads to less body and flavor. Also you can’t just add any sugar. Certain sugars will not be broken down by yeast and certain sugars such as table sugar will lead to off/bad flavor in beer… it is very hard to make an undrinkable beer but adding a bunch of sugar will get you pretty close. And that is not undrinkable because of strength, it is because it would taste like what comes out of the business end of a llama. I hope some of that helped.
